So today was "Texas Day" at school and the kiddos dressed up in their cowboy gear.
Hudson was pretty fired-up about it and even wanted to ride his "Rody" to school! Ha!

Hudson was also "Star of the Week" in his class, so he got to bring something for show & tell.....he wanted to bring Norman, so we did. Norman LOVED the little kids and did sooo well with them. :) Hudson was very proud to get to share his bestest bud with his friends.

Norman gave everyone kisses who wanted one!

Norman performed all his tricks!!....and then got treats.

We also had an exciting time at gymnastics.....Hudson LOVES Miss Sarah and she loves all her special kids. She handed out awards and Hudson got one for his Kart Wheel. :) ha!

Puppy Breath

So what is it about Puppy Breath that is so adorable and loveable? I know of NO other animal, big or small, that everyone just loves their BREATH!! If you have the answer, please tell me!

But in the meantime, meet the newest member of our family! His name is not "official" yet, but so far Hudson has been calling him Norman. We have bounced around Ranger, Chief, Hogan, Nelson, O'Malley, and a few others....but Hudson likes Norman BEST.

We picked him up yesterday in Dallas and got to meet his mom, Sadie, and his 1/2 sister Gracie. They were just super cute and fun!

Norman took to Hudson quickly and they were fast friends...

Soooo, that was our first day with Mr. Norman! He was GREAT on the car ride home and just acted like he had done it a million times already. He only got up one time during the night and went right back into his kennel. I think we have a good little dog on our hands and I'm sooo thankful we waited all this time to find the perfect dog for all of us. :)

First Day of 3-year Old Preschool!

Welp - today was Hudson's first day of Preschool!

He was VERY excited and didn't ask me not even once when I was going to come pick him up. This is polar opposite of every other year thus far, so for those of you you might have a "clinger" or a "cry-er" or just one that asks you ever day before school when you will pick them up - they really DO grow out of it!! Whew.

The morning started out with me waking up 45 mins late and when I was making his lunch I was moving something in the fridge that caused the CoffeeMate to fall straight to the floor like a ton of bricks. The result....CoffeeMate splattered ALL OVER the entire kitchen. The microwave, the ovens, the floor, the entire inside of the fridge, the rug, the the cabinets.....shall I go on? I kept my cool, took a deep breath, and cleaned it up. Tragedy averted.

So I know you all want me to shut-up and just show you the pictures so here they are.... :)

Hi there.

This has been somewhat of a strange week.
A woman who lived in my husband's hometown passed away. I didn't know her personally, but she was only 30 yrs old and has a precious husband and three young babies. Her funeral was regarded as a celebration of her life and praise was lifted as she is now in her forever home in the Kingdom of God. As much as I truly love the thought of that, and believe that with all my heart, I just have so many questions....most of them starting with the word "why". I"m not doubting God or wavering in Faith as I truly believe she lived out her destiny on this Earth, but still.....why her? why now? why-why-why....

Then tonight I found out that a woman in my Junior League Group....her son, who is a senior in high school, died of a terrible tragedy.  More why's......?

Tonight, Hudson and I were in an "accident" (WE ARE BOTH OK!!!), but it was very scary and I just can't help but continue to think about it.... So, I wanted to share it with you and hopefully it can put a little perspective in all of our lives.

At about 5:30 this evening Hudson and I were heading to the post office to mail some birthday goodies to my Dad. I called Greg from the car and he told me that the golf course was in the middle of a hail storm, wind storm, and rain storm. I proceeded to tell him about the huge, ominous cloud that was lurking over us and I even made the comment that it looked just like a tornado could drop down, but there was no rotation at all so we just carried on our way. I came to a stop light and noticed that the American flag at Chick-fil-A was blowing to the southwest. Weird. I even picked up the phone to call my parents and report the strange West Texas wind that we were experiencing. No answer, so we moved on towards the post office. We arrived there just as few rain drops were starting to fall and I informed Hudson that we had to be FAST so that we could get back to the car before the big rain started.

Forget that idea. The big rain started about 30 seconds after we walked into the post office. I picked out an appropriate box for our items to be mailed and was filling out the mailing label when I said, "man, look at that rain!!"......and WHAM. Before I could even begin to process another thought the entire window of the post office blew in on all of us. Miraculously, there were only 2 people that required stitches and gratefully neither Hudson nor I were one of them.

Hudson was obviously shaken up and scared, but he handled it all very well and all the way home we talked about how God had protected us and that it was just a weird accident that would never repeat itself.  At bedtime tonight, even after we had not talked about any of it for hours, he thanked God for keeping us safe. :)

And He did. I mean seriously.... there is absolutely NO reasonable explanation that there weren't some major injuries. There were pieces of glass that were 12 inches long....probably bigger. But glass was EVERYWHERE. How did someone's eye not get poked out? How did someone not have a huge piece of glass protruding out of their body somewhere? How in the world......???

All I can say is that Angels were among us tonight and I am soooooooooo very grateful. Humbled. Amazed. Thankful. Blessed.

I do have to admit that there is a part of me that wants to rationalize it all. I even told Greg I want to see the surveillance tapes. I mean, HOW did it all happen? How was no one seriously hurt? What did everyone do?  Did it really all happen as fast as it seemed??

The truth is that I already know....there is only one answer. There honestly is NO other explanation.
It was a God thing.  And as much as I want to keep asking why and how and what, I'm starting to realize that there really are more important things that God wants me to be noticing, feeling, living, recieving, giving....

So, in finishing up, I just want to say that your life, my life, Hudson's life....ALL our lives really can change in an instant. I plan to start living my life keeping that in the front of my mind. I hope you will too.

Hudson (aka Buzz Lightyear) decided to play in the sprinkler this weekend.
For those of you that haven't been around him lately, he stays in "Buzz-Mode" a LOT of the time. He essentially has memorized Toy Story 1 and 2. His common play time now consists of reenacting scenes from the movies. Here he is acting out the first scene of Toy Story 2 when Buzz is flying through outerspace....its' his favorite part! (I apologize in advance for the terrible coloring of these pics!)

The Latest in Lubbock...

July and August have been super busy and fun for us! Here's a quick rundown of the latest happenings, travels, adventures, etc in our little Winter Wonderland. :)

We found this little Step 2 picnic table at Sams for a bargain!
On the first day, Hudson decided to have a "tea party" for a few of his friends. I think he is calling to order a pizza....they were HUNGRY.

We made a trip to OKC. Hudson got a spend a day with Reid and Noah at the pool....Oh! what fun!!!

Greg wanted a ribeye tonight so I sent him to the store to pick them out and grab a few veggies.
What I didn't take into consideration was that we had only eaten breakfast today and had been working out in the yard for about 5 hours on what was predicted to be the hottest day of the year thus far.

This means, I sent him to the store hungry. Very hungry.
He came home with $32 worth of steak and $4 worth of veggies. I decided we MUST have some fruit as well, so I threw some pineapple (that Melissa sent us from MAUI) on the grill too.

Here was the final product:

Oven Roasted Corn w/ chili/lime butter, Green salad, Grilled pineapple and Ribeye Steak

This was my plate. Greg's steak was actually even bigger, but he had already cut into his before I could even get my camera lens off. I must say, this was the very best steak I have ever cooked. In fact, it was pretty close to perfection. Nothing but salt and pepper and a grill that was about 600+ degrees.

I have never been super confident in my grilling, but with ALL of the Food Network shows I watch, I finally decided I really could grill like Bobby Flay. There is just one rule.....Don't Fear the Flame. Let them be. Don't touch. Don't even peek. Let the grill, the heat, the flames do their job for crying out loud!

And always, let them rest after you pull them off. It makes ALL the difference in the world.

The verdict: Greg said it was amazing. Restaurant quality. The best steaks I have ever made.

Yaaaay for me!....and my tummy.

Now, time for bed!

Hudson decided on Saturday to try out his skates/roller blades that he got for Christmas. Truthfully, I am so thankful he has just now remembered them....these things scare me to death! He put on all his gear and was ready to go!!! Me, on the other hand, was praying for no broken bones....for either of us.

Grandee was here for a whole week and we had SOOOO much fun!....that we barely took any pictures. :(
Anywho, we went to Chucky Cheese one day for pizza and games. I think Grandee and I had just as much fun as Hudson. :)

Lindsey and Campbell are visiting this week from OKC....Oh how we have missed them!!

I can't stop watching this channel!!! I have NO idea what the proper definition of a "foodie" is, but if it means you would watch this channel ALL the time and virtuously nothing else, then I definitely meet the criteria.

As a matter of fact, just now when I typed the word "meet" in the previous sentence, I first typed "m-e-a-t" and not "m-e-e-t". See what I mean? Scary.

I do want you to know that I'm not just a couch potato watching-watching-watching. I am LEARNING too! I can say I have learned more about cooking, baking, ingredients, food-prep, etc. by watching The Food Network cooking shows than I have EVER known before. (I don't really get into the competition shows though) I have learned about ingredients that I never in a million Buzz Lightyears would have ever tried before. Oops!....sorry about that. We have recently traded in our son, Hudson, for Buzz Lightyear and we are in Toy Story mode at all times. Anywho, I don't just watch and learn, I have also put lots of my new-found knowledge to good use in the kitchen. And Greg says it shows!! :)

Wonder Pets - To the Rescue!!

It's been 8 days since Hudson's tonsillectomy and needless to say we are both suffering from some major cabin fever. Sooo, we decided to go to the library yesterday. On our way to load up into the car we noticed a strange sound outside....it sounded CLOSE.
Hmmm.....I know that sound....

Let me preface the rest of this story by explaining that on Sunday, the day before yesterday, Greg and I had witnessed some of our neighborhood ducks "canoodling" out in the front yard and in our driveway. To explain it even better, there were 3 male ducks frantically chasing 1 female duck. Waddling as fast as their little webbed feet would take them, jumping on her poor back, and bless her heart, it seemed as though she was running for her life.

So, after I heard the quacking that sounded so very close to our house, I knew exactly what had happened.... Our poor little lady duck had finally found her hiding place!! The bad news was that she couldn't get out.

Here is where she was trapped:

As you can see, we have this long, narrow space between our fence and the neighbors'. And this was the location of our poor little lady duck escaping for her life from the ferocious boys that had been chasing her.

I first tried "shooing" her out, but the space was so narrow that she wasn't able to flap her wings enough to lift herself out. A plan had to be made....

STAIRS!!!....yes, stairs were the answer. We had to build stairs for her and so we did.

I would like to ask that you do not judge our method and certainly not our building materials. Listen people, we were in a hurry! She had been stuck in there for God knows how long, she was nervous and scared, I only had like 10 inches to work with, it was 93 degrees outside and we had to get to the library.

Here's our little rescued friend! She took to those stairs like a professional.

Some of the Winter Boys went to Papa's farm in Kansas for the day. Looks like they had a LOT of fun.

I think you can safely say Hudson was impressed!

I remember doing this when I was little....we used to play "hide and seek in between the big wheels! :)

Sooo, when we got home from Guymon, THIS is what we came home to. Our trees are "shedding" this tiny, seedy, dusty junk EVERYWHERE!!!

It's no wonder my allergies are on super-sonic high alert right now!

As some of you may or may not know, I have some struggles with addictions. None that are particularly harmful to my health--mostly just my bank balance. :) We'll get into more detail about this later, but for now, I have an addiction/confession to tell you....

Hello - My name is Callie and I am addicted to EVOO, Garlic, Lemon, and healthy noodles.
I have been whipping up this little concoction for lunch lately and I am just WILD about it. I have fallen madly in love with Barilla "Plus" AND Ronzoni Healthy Harvest whole wheat noodles. I just boil these in a little bit of salted water and then toss them with the Magical Mixture.

Here it is:
EVOO - about a TBS or so
Garlic - 1 clove, just smashed or grated
Lemon - juice from 1/2 of a fresh lemon
Salt/Pepper just to season everything
Noodles - how ever much will make your heart happy and your tummy satisfied
Cheese - this is strictly for added pleasure, but if you have any freshly grated Parmesan on hand, it will just blow you away how delicious it is in this dish

I heat the EVOO, garlic, lemon, S/P to "marry" all the flavors while the noodles are cooking. Once the noodles are finished, just drain them and dump them into the Magical Mixture. Add cheese if you please and ENJOY!

Today I had a leftover grilled chicken breast and heated it up as well, cut it up and threw it in with the noodles.
All I can say is Y-U-M-M-Y! Here's what it looked like:

Morning Milestone!

So, as some of you may know, my little man is somewhat of a super-duper picky eater. As much as I know it "won't last forever" and he WILL someday eat more than just pizza, chicken and fish sticks....it still weighs heavy on my heart and I truly long for him to find new things to eat.

Well....today was a GOOD day in that department. The other day he mentioned something about eating eggs (which he NEVER eats) and as surprised as I was, I really didn't pay a whole lot of attention thinking he just saw something on TV or something about eggs and "thought" that he wanted them. Then, this morning he said it again!!....So, as fast I could I asked him if he wanted to make "Eggs in the Nest" with me and he, very excitedly said "YES!".

I made each of us an egg and nest hoping that if I was eating it as well, it would help keep him committed to the task at hand. Guess what??....HE ATE IT!!! And, he wanted another one when he finished the first! So, of course, I made another and he ate about 1/3 of it.

I know it may seem small and silly, but this was a GREAT way to start my day! :)

Long time, no blog....

Hello Blog. It's been quite a while since we have talked, but it's really nice to see you again!

Well, February was not a very good month for the Winter household. All three of us were sick....over and over and over. First it started with RSV for Hudson. Then I got it. Then Hudson got pink-eye. Then I got pink-eye. Then Greg got the upper respiratory bug. Then he got pink-eye.
The weather didn't help things. Cold, warm, freezing, warm, windy, snowing, warm....etc. Needless to say, we were VERY happy to see the "short month" of the year headed right on out the door and we are already welcoming March with open arms. We're ready for more sunshine, warmer days, shorter sleeves, signs of new life in the flower beds and maybe even a day or two flip-flops! :)

Obviously, it wasn't a great month for picture taking, new adventures, or anything much exciting to blog about....but I did try to capture a few little fun moments here and there. :) Here ya go!

Tried a new recipe tonight and all I can say is YUMMMMMMY!!!

I followed it exactly, except I did not add the jalapeno and I roasted the tomatillos, 1 of the three onions and 2 cloves of garlic in the oven before putting it in the food processer. (375 for about 15-20 mins)
I also substituted Cumin for the "other" chili powder that the recipe called for...(I couldn't find it in the store)

Garnishes..Mmmmm

If you are looking for an easy, but just a tad bit time consuming with the charring/steaming/peeling of the poblanos recipe, this is the PERFECT chili to shake things up a bit during this "Arctic Blast".
Oh! And I made a little cornbread to sop it up with....extra yummy! ENJOY!

UPDATE: So once I thought about it for a minute, I realized how HEALTHY this soup is! There is literally no fat in this besides the olive oil I used to saute the veggies in. I had leftovers for lunch today and it was just as fabulous...and there was no fat "floating" on top of the soup. AWESOME!!!

The Battle at Bedtime

Ok, so Hudson doesn't really "fight" going to bed.....he just always prefers for Greg or I to lie down with him. We have gotten to where we don't do it anymore, but he still ALWAYS asks (or begs) us to.

Last night, we learned how 'crafty' he is becoming is his ways of trying to persuade us. Let me preface this by saying that he had a very short nap at school and was pretty cranky all evening. This combination typically makes bedtime pretty easy b/c he is so tired, but not this night. Not this night at all....

So, at 8:30 lights out. Ahhhh....peace and quiet for mom and dad. WRONG. Hudson starts yelling "DAD!" from his bed and I give Greg the "I will kill you if you go in there look". He stays.
So, after a few minutes Hudson starts yelling "MOM!, MOMMY!!!" From my comfy seat in the living room I finally respond, "WHAT?" to which he replies "I need you". Sooo, I get up out of my comfy seat and go in and he says he needs his blankie - aka "lanky" and babydoll. A perfectly legitimate request. (Yes, he now sleeps with a babydoll. Not just any babydoll....it was MY babydoll when I was little. That's just too sweet and too sentimental, so I let him do it. Knowing full-well that it is certain that there will be ramifications of doing so.) Anywho, I get the lanky and babydoll, kiss him once again and tell him goodnight.

A few minutes later, more "MOMMY, DADDY!!".....we try as long as we can to ignore it, but then finally my fuse had "met it's maker" and I stormed into the room and said "WHAT!" again. His reply was this: "Mom, it is YOUR bedtime too. You are very tired and your eyes are closing and you are yawning and you need to come to bed RIGHT NOW." Then his voice softens and continues...."Mom, you are sooo sleepy and you are yawning. You just need to come to bed with me. Right now."

Yikes.

If I wouldn't have known better, he might have actually convinced me he was right. So, what Greg and I determined last night is that we are in trouble. BIG trouble. This kid is the master-of-all-masters of manipulation and while WE do our best not to give in and let him know that we are "the boss", I know we are in for the battle of our lives with this one. And yet somehow, I'm looking forward to every bit of it.

Well, better get ready for the day ahead....I"m shopping for a suit-of-armor today. :)

Well, it's been an extremely lazy start to the new year for us and we have LOVED it! Greg took off work Thurs/Friday and so we have had 4 full days of being home and hanging out. We went to Odessa yesterday to visit family (always fun!) and then were home in time to watch the Red Raiders give Michigan State a pretty good 'whoopin'. (I cannot discuss any of the TTU/Leach drama as it causes my blood pressure to rise to unhealthy levels and I will lose sleep, again, tonight)...stay tuned for comments on this subject for a later date.

Today consisted of a yummy breakfast, cleaning out a few toys here and there, playing outside, grabbing a few groceries, and more laziness on the couch watching more football. :) Life is good.

Tomorrow....back to work for all of us! I'm grateful for this time off and especially for the blessing of the beautiful sunshine we had today. Thankful for the safe travels for all of my family/friends and all-in-all, just grateful to be alive. Wishing everyone a wonderful week ahead!!!! CW

So this is the year I have decided to STOP thinking about the things I want to do, and actually put the wheels in motion and start doing them! :) Yes, this was a NY's resolution and it's already completed. Yay for me!

I have been wanting to start a blog for some time now. Not that I have any information, ideas, suggestions, or thoughts that are life-changing or anything....but I do have things that I would like to share with those whom are interested. Whether its a recipe, a favorite find at the mall, a good sale, or just a note/picture about my family....that's what this is for.
